The Recipe Base: VJ Cooks’ Chocolate Rice Bubble Slice
The base recipe comes from VJ Cooks and combines simple pantry staples with rich melted chocolate and chewy dried fruit:

Method Summary:
This recipe is super simple and made in one pot on the stove! You basically melt the butter and brown sugar together in a large pot over medium heat until smooth, then pull it off the heat and break in the chocolate and cocoa powder, stirring until it’s all glossy and melted. My Recipe Tweaks
One of the best things about VJ Cooks’ recipes is how flexible they are! Instead of sticking strictly to the original list, I made a few simple swaps based on what I had in the cupboard:
- Swapped Apricots for Cranberries: Dried cranberries add a nice tart contrast to the rich chocolate!
- Adjusted the Chocolate & Liquids: I used a 170g block of Cadbury Dairy Milk chocolate, so I upped the butter and cocoa powder slightly to keep the mixture perfectly fudgy and coated.
Baking with Preschoolers (4 & 2 Years Old)
Since this recipe requires dissolving the butter and sugar on the stovetop, it does require careful adult supervision around hot pots. While it can be a little tricky to manage with two toddlers in the kitchen, there are still plenty of ways for little hands to help!
My 4-year-old was the official kitchen assistant for this batch—she did an amazing job tipping in the measure of rice bubbles and dumping in the cranberries once the pot was removed from the heat and safe to work near.
